Cooking grass-fed, grain-finished Wagyu is all about preserving its incredible marbling and rich flavor. Because this beef is more tender and flavorful than typical cuts, you don’t need to overdo it—simple and careful is best.
🥩 1. Let It Come to Room Temperature
Remove from the fridge 30–45 minutes before cooking
This helps the beef cook evenly and retain its juiciness
Wagyu shines with just salt and pepper
Avoid heavy marinades—let the beef’s natural flavor lead
Cast iron or stainless steel pans are ideal
Sear 1.5–2 minutes per side for steaks 1–1.5” thick
Internal temp guide:
Rare: 120–125°F
Medium-Rare: 130–135°F (ideal for Wagyu)
Medium: 140–145°F
🔥 Pro Tip: For thicker cuts, use the reverse-sear method: oven at 225°F until ~115°F internally, then sear hot to finish.
Let the steak rest 5–10 minutes after cooking
This allows juices to redistribute for maximum tenderness
For roasts, fajitas, or larger cuts—always slice against the muscle fibers to keep the bite tender
No need for butter—the Wagyu fat renders into the pan naturally (unless you just love butter :) )
